Carrot and ginger soup recipe

Honestly, is there anything better than soup? I love making soup, it warms up the soul, you get to have yummy crusty bread with it and you can easily make it in a soup maker without worrying about loads of washing up or sky high electric bills. This carrot and ginger soup is one of my favourites but be warned, if you’re not a fan of ginger, you won’t like this soup.

I’ve made quite a few soup recipes so far and I’ve used a soup maker in every single one. They’re simple to use, easy to set up and take half the time than it would on the hob. This carrot ginger soup won’t even take half an hour and you’ll get a daily intake of scrummy vegetables!

Carrot Ginger Soup Recipe

This is a carrot soup with coconut milk, the coconut milk gives it a creamy, rich flavour that you just can’t do without. Thankfully, with the soup maker, you don’t have to worry about chopping your carrots up super thing because it does all the work for you. However, I have seen complaints because people have put a carrot in whole and it’s not worked. You will have to cut them a little first.

The Benefits Of Healthy Soup Recipes

So I wanted to talk about the benefits of soup recipes. I think soup gets a bad reputation because it can be a little boring if it’s just a random soup out of a can and there’s just no love in eating it. Whereas, if you make it yourself it’s a lot nicer.

I’m talking about all my soup recipes, not just this carrot and ginger soup recipe. Soups are most of the time super healthy, they’re quite frankly delicious, especially my soup recipes. Soup recipes are also very budget friendly, they’re affordable and even more so if you’re shopping in places such as Aldi.

Take a look at some of the points below, they apply to this carrot and ginger soup and all of the other soups I’ve made as well.

  • Nutritious: Soups are a great way to get your daily dose of fruits, vegetables, and whole grains. They are also a good source of protein and fibre.
  • Filling: Soups can be a filling meal option, even if they are low in calories. This is because they are high in water and fibre, which help to keep you feeling full.
  • Affordable: Soups are a relatively affordable meal option. You can make a big pot of soup for a fraction of the cost of a restaurant meal.
  • Easy to make: Soups are relatively easy to make, even for beginner cooks. There are many simple recipes available online and in cookbooks.

This carrot ginger soup is, in my opinion, very tasty indeed. I would love to know if you made this soup, if you did why not consider uploading a picture to Instagram (@mattscafee) and letting me know what you think? You can tag me as well!

Let me know if you made this carrot soup with coconut milk as I know some people don’t like adding coconut milk. I just feel without the coconut milk it might taste a little bitter and strong so the coconut milk gives it that creamy taste and texture that’s needed in this soup recipe.
