I love cherry and almonds, so obviously cherry bakewells!! I wanted to make some cherry bakewell cupcakes, but I’m a little fussy when it comes to cherries as most just don’t cut it. After some hunting I found the Opies Cocktail Cherries. They don’t have that bitter after taste like your run of the mill shop brought cherries and they cook a lot better in the cakes.
I have to say that I love having a cupcake a couple of minutes after it has come out the oven. It isn’t too hot, but its just right so that it taste like heaven! I really hope you enjoy this recipe. Try and get at least a couple of cherry halves into each cake, so that everyone will be happy. If you like almond like I do, chuck a little extra in because some of the extract cooks out.
The cherries also make excellent toppers if you’re thinking about icing the cakes afterwards. I mean my icing skills aren’t quite up to scratch but I’m sure yours will look stunning!
