Minted Lamb Stir Fry

As you casn tell, I like to make sure that the food that I make is packed full of flavour and the stir fry is no different. I bought a pre-mix of mint flavouring for stir fries etc, so I use that and can add as much or as little as I like or want. As I have mentioned in my post To Freeze or Not To Freeze, I have a draw in my freezer dedicated to frozen vegetables, so I use what is in there, it makes cooking meals like this so much quicker and easier.

The rest of the stir fry is pretty simple really.

Minted Lamb Stir Fry
If you love lamb, this this Minted Lamb Stir Fry recipe is just the ticket, quick and easy to make and sure packs a minty twist.

Instructions
  1. Put the mint flavouring on the diced meat and mix it all together, leave to marinade.
  2. Heat a frying pan / wok and add some FryLight, then add the onions, leek and mushrooms, cook until fried, remove from the pan and put in a bowl for later. In another pan, put the sweet potato, green beans and baby corn, add some water and simmer gentle to defrost and cook the vegetables.
  3. In the same pan that you used for the onions, leeks and mushrooms, add the minted lamb and cook until the lamb is completely cooked through, you will need to keep an eye on it, you may need to add some water so that the lamb doesn’t stick to the bottom of the pan.
  4. Drain the simmering vegetables, as long as they are cooked.
  5. Once the lamb is cooked, add all the vegetables to the pan, mix together.
  6. Serve in bowls, remeber there will be some juice from the vegetables and meat. If you need some more help, why not check out the pictures showing the step my step:

N.B You can put any vegetables into the stir fry, as long as you like them, then it is all fair game. I do change the vegetables in mine regularly.
