Preheat oven to 180°C or 350°F
In a saucepan, add the passata, water, vinegar, spices and Jordans Skinny Sweetener, bring to a fast simmer and then lower the heat to a gentle simmer, until the sauce has thickened and reduced.
In a frying pan, spray some FryLight and add the mince onion and garlic. Cook until chicken is browned.
Once the mince is all cooked, add the peppers and grated carrot and stir until it is all combined.
Add the tomato sauce to the mince mixture and combined well, cook for a couple of minutes until the peppers have sofened.
Put the quark into a bowl, add some salt and pepper and mix together before using.
In an ovenproof dish, add half of the mince mixture, add 4 of the dried lasagne sheets to cover the mince.
Spread over half of the quark and then layer another of the lasagne sheets. Then repeat the mince mixture, lasagne sheets and top off with the last of the quark mixture.
Sprinkle with the cheese and put in the oven.
Bake in the oven for 35 minutes or until the cheese has browned nicely.
Serve on its own or with a side salad.
