In a bowl, add the orange juice and raisings/currents and leave to soak
Melt the low fat spread, make sure you don't burn this.
Using the kneeding attachment on your stand mixer.
In the stand mixer bowl, add the flour, yeast, cinnamon, nutmeg, sweetener and salt in a bowl and combined.
Add the melted butter to the dry ingredients, along with the fruit and orange juice.
Mix everything together and leave to knead for 5-8 minutes until everything is fully combined.
In a large bowl, spray it with Low Calorie Coking Spray, put the dough into the bowl and cover with a tea towel. or cloth Leave to rise for 30 minutes.
After 30 minutes, take the dough out of the bowl and split the mixture into 12 balls. Place the hot cross bun balls onto a non-stick baking tray.
Cover the hot cross buns with a tea towel. or cloth and leave to rise for another 30 minutes.
Preheat oven to 180°C, 350°F, Gas Mark 6
Bake for 20 minutes or until the hot cross buns are golden brown.
