600gChicken BreastDiced
4ApplesPeeled, Cored, and Diced

Instructions
Peel and dice the potatoes, peel, remove the core and dice the apples into the same slice chunks as the potatoes. Put into the saucepan and boil until tender, but not mushy. 10-15 minutes
Preheat oven to 180°C / 350℉.
Drain the potatoes and apples and add into the large roasting pan. Add the onions and chicken. Add the oil, thyme, salt and pepper. Mix until fully combined.
Cook for 25 minutes. Remove from the oven, give it a mix and put back in the oven for another 25 minutes.
