Ingredients

  • 2 Weetabix Biscuits Crushed
  • 40 g Self-Raising Flour
  • 1 tsp Baking Powder
  • 2 Medium Eggs
  • 50 g Fat-Free Natural Yogurt
  • 2 tbsp Granulated Sweetener Or adjust to taste
  • 1 tsp Vanilla Extract
  • 100 ml Semi-Skimmed Milk
  • 1 Handful of Mixed Berries Optional for extra flavour
  • Low-calorie Cooking Spray

Instructions

  • Preheat the Oven: Preheat your oven to 180°C (160°C fan) or Gas Mark 4. Spray a 12-hole muffin tin with low-calorie cooking spray or use muffin cases.
  • Mix Dry Ingredients: In a bowl, crush the Weetabix biscuits and mix with the self-raising flour and baking powder.
  • Prepare Wet Ingredients: In a separate bowl, beat the eggs, then add the yogurt, sweetener, vanilla extract, and milk. Whisk until well combined.
  • Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring until you form a smooth batter. Fold in the mixed berries if using.
  • Fill Muffin Tins: Divide the mixture evenly among the 12 muffin holes.
  • Bake: Bake in the preheated oven for 18-20 minutes, or until the muffins are golden and a skewer inserted into the centre comes out clean.
  • Cool and Enjoy: Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack. Enjoy these slimming-friendly treats!
