Preheat the oven to 180°C/350°F/Gas 4
Use a loaf tin liner to line the loaf tin ready for the cake mixture.
Grate the carrot and set aside for later.
In a bowl, add the flour, mixed spice, cinnamon, sweetener and baking powder togeter.
Add the spread to the mixture and mix until the mixture is starting to come together, then add orange juice and zest, then add one egg at a time, mixing until it is fully combined.
Add the grated carrot and raisins and mix together until fully combined.
Put the mixture into the lined loaf tin.
Bake for 45 minutes or until a skewer comes out clean from the middle of the cake.
Once out of the oven, remove from the loaf tin and place on a wire rack to cool for an hour.
Once the cake is cool, you can then start working on the frosting.
Add the quark, orange zest and mixed spice into a bowl, mix together until fully combined.
Spread the quark mixture over the top of the cake and leave in the fridge to firm up for an hour.
Cut the cake into 8 slices and enjoy with a hot drink.
