Ingredients

Muffin

  • 150 g Self Raising Flour
  • 115 g Low Fat Spread
  • 2 tbsp Sukrin:1
  • 2 Eggs
  • 2 tbsp Slimming World Syn Free Lemon Curd

Syrup

  • 6 tbsp Lemon Juice
  • 2 tbsp Sukrin:1

Instructions

For the Muffin

  • Preheat oven to 180°C, 400°F, Gas Mark 6
  • Add all of the ingredients into large bowl and mix until it is all combined.
  • Once the mixture is combined, spoon into 6 muffin cases.
  • Put the muffins in the oven for 15 – 20 minutes, or until a skewer comes out clean when inserted into the middle of the muffin.

For The Syrup

  • Add the lemon juice and sweetener into a small pan and heat through gently until the sweetener has dissolved and the syrup has gone a little thick.
  • Once the muffins are out of the oven, use the skewer to make holes across the top of the muffin, be careful not to damage the muffin.
  • Now brush the muffins with the syrup and leave them to cool and the syrup to soak in. For best results, leave the muffins overnight.
