Slimming World Tuna and Sweetcorn Fish Cakes (Syn Free)

Now fishcakes can difficult to get right, most of them are just flavoured potato, well this recipe is certainly different, packed full of fish, these Slimming World Tuna and Sweetcorn Fish Cakes (Syn Free) should be on your dinner list.

Ingredients

  • 2 Tins Tuna in spring water drained
  • 3 Medium Potatoes
  • 1 Tin Sweetcorn drained
  • 4 tbsp Herbs chives or coriander or parsley or a mixture of the 3.
  • 1 Medium Egg lightly beaten
  • Black Pepper
  • Frylight

Instructions

  • Preheat the oven to 180°C/160°C Fan/Gas 4.
  • Peel, chop and then boil the potatoes for 15 minutes, then drain and and mash the up.
  • Add the sweetcorn, tuna, herbs and eggs and add a little pepper.
  • Combine all of the ingredients and divide into 8 portions and shape into a flat patty and place on a baking tray lined with parchment paper. I use a cookie cutter to get the shape.
  • Spray with Frylight and place in the oven for 15-20 minutes until lightly golden.
  • Serve with a Slimming World chips, or a lovely salad.
