Ingredients
2TinsTuna in spring waterdrained
3MediumPotatoes
1TinSweetcorndrained
4tbspHerbschives or coriander or parsley or a mixture of the 3.
1MediumEgglightly beaten
Black Pepper
Frylight
Instructions
Preheat the oven to 180°C/160°C Fan/Gas 4.
Peel, chop and then boil the potatoes for 15 minutes, then drain and and mash the up.
Add the sweetcorn, tuna, herbs and eggs and add a little pepper.
Combine all of the ingredients and divide into 8 portions and shape into a flat patty and place on a baking tray lined with parchment paper.
I use a cookie cutter to get the shape.
Spray with Frylight and place in the oven for 15-20 minutes until lightly golden.
Serve with a Slimming World chips, or a lovely salad.
