You may have seen my healthy Weetabix cake but now I bring you Weetabix muffins! A few years ago I would have never even thought about using Weetabix in baking recipes, I would have said they were too dry and needed milk and sugar poured all over them but now, now I know different and all my bakes with Weetabix in taste amazing!

If you like using Weetabix in your bakes you’re in for a treat. Make sure you follow the recipe though or they might come out like bricks and you’ll end up breaking a tooth trying to eat them, I found that out on my first attempt at making these after following a very disaterious recipe, I’m happy to say I adapted it throughly and made me own!

These Healthy Weetabix Muffins are the perfect guilt-free treat! Packed with fibre and full of flavour, they’re ideal for a quick breakfast or snack. Easy to make, delicious, and slimming-friendly!

Ingredients
  

  • 2 Weetabix Biscuits Crushed
  • 40 g Self-Raising Flour
  • 1 tsp Baking Powder
  • 2 Medium Eggs
  • 50 g Fat-Free Natural Yogurt
  • 2 tbsp Granulated Sweetener Or adjust to taste
  • 1 tsp Vanilla Extract
  • 100 ml Semi-Skimmed Milk
  • 1 Handful of Mixed Berries Optional for extra flavour
  • Low-calorie Cooking Spray

Instructions
 

  • Preheat the Oven: Preheat your oven to 180°C (160°C fan) or Gas Mark 4. Spray a 12-hole muffin tin with low-calorie cooking spray or use muffin cases.
