If you’re looking for more gut friendly recipes, this one is a must try and especially if you like lemon. After getting a Crohn’s diagnosis within the family I’ve been cooking a lot more IBD recipes. Most people will think that said recipes are boring, unfulfilling and leave you hungry but if you cook them right, that’s just not the case.
It’s true that a lot of IBD issues are similar and come with similar food triggers which is why this isn’t a dedicated Crohn’s recipe and can be used by most people with IBD conditions. However, I would always suggest looking at the recipe and if there are any foods that trigger flare-ups, leave them out and don’t take risks.

Lemon And Thyme Chicken IBD Recipe Ingredients
The ingredients in this lemon and thyme chicken recipe are on the rare list and highly unlikely to cause any flare-up symptoms. It’s also super healthy and one of my favourite Crohn’s recipes to make. Take a look at all of the ingredients below and why I used them. You can also substitute ingredients if you don’t like them or if they cause flare-ups.
Chicken: Chicken is one of the best meats to have if you have Colitis or Crohn’s as it isn’t going to cause any flare-ups. It’s also a very versatile meat which can be used in many dishes and is used in most of my recipes.
Lemon: Lemon is a great ingredient to use in Crohn’s recipes as it helps clear out your bowls and any food product stopping your immune system from attacking these areas, not to mention it also tastes amazing in recipes such as this lemon and thyme traybake recipe.
Potatoes: Potatoes are plain enough so that they don’t set off a flare-up as long as they are cooked. There are many ways you can cook potatoes, I like chunks in this recipe but you can also make roast potatoes and mashed potatoes but keep an eye on what you’re adding, butter in mashed potato can cause a flare up and too much oil on roast potatoes can do the same.
Peppers: Peppers are perfect for gut-friendly recipes as long as they are cooked. Uncooked peppers can set off flare-ups if you have a condition such as Colitis or Crohn’s.
Onions: Onions help to add flavour to recipes and look good if you’re using red onions. However, raw onions can cause flare-ups so ensure that they are cooked.
Thyme: Thyme gives the dish added flavours just like the lemon does and they work well together. Thyme is a great ingredient to use in IBD recipes as it doesn’t cause flare-ups, unlike spicy foods.
All of these ingredients in this recipe are tested by people who need Crohn’s recipes. However, if there are any ingredients that you know do not agree with you then please feel free to substitute them and if you’re not sure what to substitute them with, ask in the comments!

It’s one of my favourites to make and if you find there’s not enough lemon in there I would suggest getting another lemon and squeezing some lemon juice onto it while it cooks to give it that added flavour, just be careful you don’t get seeds in it all.
This is one of my favourite gut friendly recipes, it tastes amazing in my opinion, looks great and is so super easy to make. Suffering from Crohn’s everyone was telling me that I wouldn’t be able to enjoy amazing flavours anymore, this recipe proves them wrong and it’s almost as good as my honey and garlic chicken recipe, almost.
Lemon And Thyme Chicken IBD Recipe
Equipment
- Roasting Pan
Ingredients
- 1 kg Potatoes Peeled and Diced
- 1 kg Chicken Sliced
- 2 Bell Peppers Sliced (seeds removed)
- 2 Red Onions Sliced
- 2 Lemons Sliced
- 1 tbsp Thyme
- 1 tsp Minced Garlic
- 2 tbsp Olive Oil
- Salt & Pepper
Instructions
- Preheat the oven to 180°C / 350℉
- Peel the potatoes, dice into large chunks and add to the roasting pan. Slice the onions and add them to the roasting pan.
- Add the sliced lemons, oil, thyme, salt & pepper. Mix to combine.
- Slice the chicken, add to the roasting pan and mix together. Put this into the oven for 30 minutes
- After 30 minutes, remove the roasting pan from the oven, give the vegetables and chicken a good mix around, and put it back in the oven for another 45 minutes.
- Remove from the oven, make sure the chicken and potatoes are fully cooked. Serve and enjoy.
