Who doesn’t love Easter? I love it, with all the chocolate what could possibly go wrong, apart from going up a jean size that is! These Easter doughnuts are the perfect treat if you’re in the mood to do some Easter baking! These Cadbury mini egg doughnuts are amazing!

I swear it doesn’t matter where you live in the UK, you probably love mini eggs. They’re not like creme eggs, you don’t have that love it or hate it battle because everyone loves mini eggs right? That’s why I thought this Cadbury mini egg donut recipe would be popular.

I took them to work and people loved them! They were demolished before lunchtime and I’ve been asked to make them again several times! Although the people I work with aren’t fussy when it comes to food, these mini egg doughnuts were one of their favourites, a real crowd pleaser.

Why make these Cadbury mini egg doughnuts? Well because they taste amazing. I’ve found that a lot of easter recipes online are very complicated. There are loads of easter cakes out there and they have thousands of steps, and hundreds of ingredients and they always cause one thing, a headache!

This recipe is super easy. These baked doughnuts mean you don’t have to fry anything and there’s so much less hassle. It’s one of the best easy easter doughnut recipes I’ve seen but what can I say, I’m a little biased!

I’ve seen some other recipes and I’m going to say a few things people might not like but oh well we all have our opinions. I feel that these Cadbury mini egg doughnuts are better with a chocolate glaze. It tastes better and looks better. I know some people like using icing but I just don’t think it looks as good, sorry!

I have also seen people say that doughnuts shouldn’t be baked and they should be cooked “traditionally”, nope! Baking doughnuts is so much easier, and healthier and anyone can do it as long as they have a doughnut tray and half an hour!

Easter Egg Doughnut Tips

I wanted to throw out a few tips while writing this post because there are ways that you can go wrong and I don’t want that. I want the process of making these Cadbury mini egg doughnuts as easy and stress-free as possible!

When it comes to making these easter doughnuts you want to make sure you spray your doughnut tray! I use frylight or a cheaper alternative that you can pick up in most supermarkets. Give each doughnut section two quick sprays and you’re ready to go, you don’t need to go mad and I find that using oil makes them bake better!

When you make this Cadbury mini egg doughnut recipe make sure that you connect the mixture. If you spoon the mixture in and there are gaps, mix the mixture together. This means the doughnuts are less likely to break apart when they are baked.

I’ll repeat myself but that’s fine. I feel that there aren’t enough simple easter recipes out there and considering the internet is a big place, I expected a lot better! It’s great if you can make a cake with 20 layers, fancy icing and fondant work but I’m not at that skill level just yet!

Make sure you pop the mini eggs in the fridge before you go smashing them up, otherwise you’ll just be left with crumbs and not much else. This mini egg doughnut recipe will make more than enough although if you want even more just double the recipe and you shouldn’t have any worries.

Cadbury Mini Egg Doughnuts Recipe

Equipment

  • Doughnut Tray
  • Mixing Bowl
  • Scales
  • Cake Tester

Ingredients
  

  • 200 g Self Raising Flour
  • 60 g Low Fat Spread Melted
  • 12 g Sweetener
  • 1 tsp Vanilla Essence
  • ½ tsp Baking Soda

Topping

  • 100 g Milk Chocolate Melted
  • 1 Pack Mini Eggs

Instructions
 

  • Preheat oven to 180°C / 350°F / Gas 4 . Spray the doughnut pan lightly with non-stick cooking spray and set aside.
  • Add the flour, baking soda, and sweetener to a large mixing bowl. Add the melted low fat spread, egg, and vanilla essence in a separate bowl.
  • Now add the wet ingredients to the dry ingredients and mix them together until it is fully combined.
  • Spoon the doughnut mixture into the doughnut tray. Only fill the doughnuts about halfway as they grow when baking. Flatten the mixture to avoid lumps or bumps.
  • Bake in the oven for 12-15 minutes or until a cake tester inserted into the doughnut comes out clean.
  • Remove the doughnuts from the oven and allow them to cool for about 10 minutes in the pan. Remove doughnuts from the pan and transfer them to a wire rack to cool.

Topping

  • Crush the mini eggs up so you can sprinkle them on the doughnuts.
  • Melt the milk chocolate
  • Dunk the doughnuts into the melted chocolate and place back on the wire rack (chocolate side up).
  • Sprinkle the broken up mini eggs on top of the doughnuts.
  • Place the doughnuts in the fridge for 10-20 minutes to let chocolate harden.
  • Now enjoy!!
