Honestly, is there anything better than soup? I love making soup, it warms up the soul, you get to have yummy crusty bread with it and you can easily make it in a soup maker without worrying about loads of washing up or sky high electric bills. This carrot and ginger soup is one of my favourites but be warned, if you’re not a fan of ginger, you won’t like this soup.
I’ve made quite a few soup recipes so far and I’ve used a soup maker in every single one. They’re simple to use, easy to set up and take half the time than it would on the hob. This carrot ginger soup won’t even take half an hour and you’ll get a daily intake of scrummy vegetables!
Carrot Ginger Soup Recipe
This is a carrot soup with coconut milk, the coconut milk gives it a creamy, rich flavour that you just can’t do without. Thankfully, with the soup maker, you don’t have to worry about chopping your carrots up super thing because it does all the work for you. However, I have seen complaints because people have put a carrot in whole and it’s not worked. You will have to cut them a little first.

Let me know if you made this carrot soup with coconut milk as I know some people don’t like adding coconut milk. I just feel without the coconut milk it might taste a little bitter and strong so the coconut milk gives it that creamy taste and texture that’s needed in this soup recipe.
Easy Carrot and Ginger Soup Recipe
Equipment
- Soup Maker
- Chopping Board
- Kitchen Knife
Ingredients
- 900 g Carrots
- 700 ml Water
- 400 ml Reduced Fat Coconut Milk
- 2 tbsp Fresh Ginger (Grated)
- 1 Onion
- 1 Clove Garlic
- 1 Vegetable Stock Cube
- ½ Fresh Lime Need the juice only.
Instructions
- Peel and the carrots and chop into chunks and peel and slice the onions and add to the soup marker.
- Add the water, stock cube, ginger and garlic to the soup maker. Turn on the smooth setting and leave to cook.
- Once the soup is ready, add the coconut milk and the juice of the lime. Give it a good mix together and serve.
