I love coffee and I can’t get enough of it! Which would make sense with all the coffee posts and recipes that I have on the blog! I have my dedicated coffee club posts and then I have several coffee recipes as well. This however is a post for these amazing coffee muffins recipe!

These easy coffee muffins will have you smiling ear to ear, I made them and ate about 4 in one day; they’re that good! I’ve seen a few recipes online but I find they’re a little complicated or you’re having to do some weird stuff with the coffee and no one has the time for that, which is why this is an easy coffee muffins recipe.

Now I will point out that if you’re making these coffee muffins you don’t need posh and fancy muffin cases. However, I just love them and if I know I’m taking them to work I love to show off a little bit. You can however use silicone cupcake cases which are so much better for the environment so take a look at them!

You will see for this coffee muffin recipe I have started to switch to silicone muffin baking trays as they’re better for the environment and need replacing much less! I’ll link them in my equipment section below but totally check them out if you’re looking for a more eco-conscious kitchen!

Baking With Coffee

I love baking with coffee, the only issue is just because coffee is dark it doesn’t mean that your bake is going to be dark. You can see from these coffee muffins that they don’t turn out super dark but they still taste 100% like coffee so it’s something to keep in mind.

Coffee however is one of my favourite flavours to bake with. You can use flavoured coffee to give your bakes a different taste and all coffee drinkers will know that coffee has different strengths so depending on how strong you want these coffee muffins or any coffee bake you make, depends on what coffee you use.

Are These Coffee Muffins Healthy?

Probably not but let’s break it down, shall we? It’s great if you can find treats that aren’t unhealthy and aren’t going to make you bigger than the sun right?! These coffee muffins aren’t designed to be low calorie coffee muffins or slimming world coffee muffins but let’s work it out shall we?

Slimming world coffee muffins recipe. Again these weren’t designed to be slimming world coffee muffins however if you are on the slimming world journey, each one of these coffee muffins is going to set you back 8 syns per muffin!

Low Calorie Coffee Muffins Recipe. These coffee muffins are so yummy you wouldn’t think they’d be low calorie right? Well, each one of these coffee muffins is going to be 160 calories, so you tell me if they’re low calorie coffee muffins!

Easy Coffee Muffins Recipe

Super Easy Coffee Muffins
Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Equipment

  • Muffin Cases You can use Silicone Muffins Cases or Fancy Paper Muffin Cases
  • Mixing Bowl
  • Silicone Spatula
  • Kitchen Weighing Scales

Ingredients
  

  • 150 g Self Raising Flour
  • 115 g Low Fat Spread
  • 2 tbsp Sukrin:1
  • 2 tbsp Instant Coffee
  • 2 Eggs

Instructions
 

  • Preheat oven to 180°C/350℉/Gas Mark 4.
  • Add all of the ingredients into large bowl and mix until it is all combined.
  • Once the mixture is combined, spoon into 6 muffin cases.
  • Put the muffins in the oven for 20 – 25 minutes, or until a skewer comes out clean when inserted into the middle of the muffin.
  • Leave the muffins to cool, then enjoy with your favourite hot drink.
