So I’m trying new things at the moment and one of these things are low calorie meals. My partner follows a low calories diet, he uses MyFitnessPal and he’s doing quite well which is why I’m going to start making more low calorie dinners. Starting with this very yummy low calorie vegetable pie!
One of the things I will say, when it comes to low calorie meals I find that the best meals are vegetarian or vegan meals as meat most of the time contains a lot of calories which isn’t great when you’re counting them!

So this is one of my first low calorie dinners, I made it towards the end of the year as it’s a nice winter dinner, really warms the soul and tastes amazing at the same time. It’s full of goodness, vegetables and isn’t going to make you consume calories you don’t need.
One of the great things I love about this pie when it comes to eating healthier, a portion of this contains your 5 a day that is recommended, that’s because it’s packed full of yummy vegetables! If you’re not satisfied you can always have a fruit salad for dessert and really top up!
This low calories vegetable pie recipe is super easy to make, I’m not a fan of recipes that take hours to make or have a thousand ingredients and steps because no one has time for that. When you’re calorie counting you don’t want to be making a meal for hours!

One thing I will say, add a little spice. Some people like it really spicy but some people don’t so make sure you taste it as you go along. There’s nothing worse than making a low calorie vegetable pie recipe and then biting into it and it being too spicy!
Make sure you thicken the sauce as well, then drizzle it over the mixture as you can see above. It looks so yummy, makes sure that the veggies cook all the way through and aren’t super hard when you bite into them and makes everything taste so much better!

You can add cheese to the pie before it goes into the oven although that will change the amount, we love cheese so we did add it in these pictures but you don’t have to!
Vegetable Vegetarian Pie Recipe – Low Calorie Vegetable Pie
Equipment
- Casserole Dish
- Potato Ricer
- Knife Set
- Chopping Board
Ingredients
- 600 g Cauliflower (Large) Cut into into small florets
- 250 g Potatoes
- 2 Sweet Potato
- 150 g Carrots
- 2 Medium Onion
- 1 Tin Chopped Tomato
- 1 Clove Garlic Crushed
- 50 g Cheese (Low Fat) Grated
- ½ tsp Chilli Flakes
- 1 tsp Paprika
- 10 g Low Fat Spread
Instructions
- Cut the cauliflower into small florets. Peel and cut the carrots into large chunks. Peel the sweet potato and cut into bite sized chunks.
- Add the above vegetables to a steamer and cook until they are ¾ cooked.
- Peel the potatoes and cut into chunks for mash. Add to a pan of water and put on to boil.
- Peel and dice the onion and add to a deep saucepan with some frylight.
- Pre-heat the oven to 180°C/350°F/Gas Mark 4.
- Once the onions have started to brown, add the vegetables to the onions.
- Add the tin of tomatoes, chilli and paprika, and mix until all the vegetables are covered in the tomatoes. Leave to cook for 4 minutes.
- Drain the potatoes and put the potatoes back into the pan and add the low fat spread and mash the potatoes.
- Now transfer the vegetable mixture into the casserole dish, if you have a lot of sauce left, thicken this by adding a little cornflour slurry and then pour over the top of the vegetables in the dish.
- Top the dish with the mash potato. Make sure it covers all the vegetables in the dish.
- Sprinkle with cheese and put into the oven 10 – 15 minutes, until the cheese has melted and started going golden.
- Serve and enjoy.
