Awesome Red Pepper and Sweet Potato Soup

This Red Pepper and Sweet Potato Soup have to be one of my favourite soups. This is such a simple and easy to do recipe. It is a soup that doesn’t take too much time to prepare, it’s healthy and great for lunches and dinners. As this is a Slimming World recipe, this is SYN FREE!!

You can make this in in a pan on the cooker or with a soup maker.


  • 4 medium or 3 large peppers, chopped into chunks
  • 1 medium onion, sliced – I prefer red onion
  • 2 sweet potatoes – diced
  • 900ml vegetable stock
  • 1 garlic clove, crushed
  • Pinch of Oregano
  • Salt and freshly ground black pepper

You can use some chilli or ceyenne pepper to spice the soup up or even a little fat free plain yogurt right at the end, but you can also leave them out if you don’t want or like them. Check out my Sweetner and Spice post for some other alernatives.




On the Cooker

  1. Spray some FryLight into a saucepan and add the onions, cook them until they soften. While the onions are softening, boil the kettle.
  2. Once onions are soft, add peppers, sweet potato, garlic and then add the stock.
  3. Cook for 20 minutes until all is soft and sweet potatoes start falling apart.
  4. If you are using them, add the chili powder or cayenne pepper.
  5. Use the hand blender to make the soup smooth, make sure you get all then bit.
  6. Serve with some bread, rolls or what I like is the thins.

Soup Maker

  1. Add the Onions, Peppers and Sweet potatoes into the soup maker.
  2. Add some freshly ground black pepper and a little salt.
  3. Add the 900ml of stock, this can be hot or cold.
  4. Put the soup maker on and into the smooth function and leave to cook.
  5. Serve with some bread, rolls or what I like is the thins.
