Tuna Fish Cakes or Tuna Fish Patties?
When I was making these I struggled with what they should be called, are they fish cakes or are they fish patties? If you think of a traditional fishcake, then these are very different as there are no breadcrumbs anywhere near these. On the other hand, are the patties? I thought burgers were patties, so could these also be called a patty? Anyway I will let you make up your mind about what they should be called.

Perfect Mashed Potato
You may be thinking mashed potato is just mashed potato, I have to disagree completely with that statement. If you use a potato masher, then you will end up with lumpy mashed potato. The way to get the best mashed potato is by using a ricer, a potato ricer that is.
You may be wondering what a potato ricer is, well it is a kitchen tool that you put your potatoes into and it forces the potato through a sheet of small holes, about a diameter in size, giving it the same size as a grain of rice. By the way it is actually no longer using the ricer than it is mashing potatoes by hand. Once you have done that with your potatoes, just add salt, pepper, milk and butter and you get the best, lump free smooth mashed potato.
Once you go potato ricer, you won’t go back. I got mine for Christmas a couple of years ago and I can’t believe I never had one sooner.

Slimming World Tuna and Sweetcorn Fish Cakes (Syn Free) Recipe
Slimming World Tuna and Sweetcorn Fish Cakes (Syn Free)
- 2 Tins Tuna in spring water drained
- 3 Medium Potatoes
- 1 Tin Sweetcorn drained
- 4 tbsp Herbs chives or coriander or parsley or a mixture of the 3.
- 1 Medium Egg lightly beaten
- Black Pepper
- Preheat the oven to 180°C/160°C Fan/Gas 4.
- Peel, chop and then boil the potatoes for 15 minutes, then drain and and mash the up.
- Add the sweetcorn, tuna, herbs and eggs and add a little pepper.
- Combine all of the ingredients and divide into 8 portions and shape into a flat patty and place on a baking tray lined with parchment paper. I use a cookie cutter to get the shape.
- Spray with Frylight and place in the oven for 15-20 minutes until lightly golden.
- Serve with a Slimming World chips, or a lovely salad.
