This slimming world chicken tray bake recipe is super easy to make and taste so good. I’ve made it a few times now and am now only just getting round to telling everyone about it which is totally selfish of me!
Slimming world meals can be hard to come by, I’ve found a lot of slimming world dinner recipes can have loads of ingredients in them or take forever to chop it all up. This is a one pot slimming world meal. All you need to do is cook everything in the oven and it’s done!
It’s a really simple traybake to make, in terms of one pot chicken traybakes go, this one is a winner. I will admit that I add a lot of chicken in mine so that there’s an even ratio as well. The best thing about this dinner recipe is that you don’t really need anything fancy to make it. Make sure you have a decent roasting dish to go into the oven and maybe get yourself a special knife set but other than that you should have everything you need.
Slimming World Roast Chicken Traybake
Not only is this dish super healthy, syn free and tastes and smells amazing but everyone will love it. Some tips I would throw out there for this recipe. Make sure you cut your tomatoes in half, otherwise they will spit when you cut into them after they are on your plate and they can burn.
Don’t cut your vegetables too thick otherwise, they won’t cook in time and you’ll be left with amazing chicken but undercooked vegetables and no one wants that for dinner. Also, make sure you cover your vegetables mainly with sauce so that you have an even cook all over.

Sauce for the Traybake
If you are wanting to speed things up when cooking and think that grabbing a sauce from the shelf in the supermarket is a good idea, please reconsider. The reason I say this is that these sauces in the supermarket are packed full of syns that you may have not thought about.
If you grab a Homepride cooking sauce or pasta bake sauce, these would work for this recipe, it would mean you don’t need the passata and spices, BUT this will mean that you need to add 22.5 syns to the meal!! Yes, they can be and are that high!
Slimming World Chicken Traybake
Equipment
- Large Roasting TIn
- Good Wuality Knife
Ingredients
- 400 g Diced Skinless Chicken
- 500 g New Potatoes Cut in half
- 500 g Passata
- 250 g Carrots
- 250 g Butternut Squash
- 2 Peppers
- 2 Onions
- 1 Clove Garlic Crushed
- ½ tsp Caynne Pepper
- ½ tsp Chilli Flakes
- Frylight
Instructions
- Preheat oven to 180°C, 400°F, Gas Mark 6
- Add water to a pan and put it on to boil.
- Peel and chop the vegetables into bite sized pieces.
- Add the carrots and potatoes into the boiling water and cook until they are half cooked.
- Dice the chicken into bite sized pieces.
- Drain the carrots and potatoes and add to a large roasting tin, along with the other vegetables and chicken.
- Spray all the vegetables and chicken with some frylight and put into the oven for 25 minutes.
- After 25 minutes, add the passata and spices and mix everything together.
- Cook for another 25 – 35 minutes, or until the vegetables and chicken are all cooked through.
- Serve and enjoy.
