Homemade loaded mac and cheese

- Large Deep Frying Pan
- Casserole Dish
Ingredients
- 300 g Macaroni
- 250 ml Unsweetened Soya Milk
- 120 g Reduced-Fat Cheddar Cheese Grated
- 60 g Reduced-Fat Mozzarella Cheese Grated
- 2 tbsp Plain Flour
- 1 Onions Diced
- 1 tbsp Low-Fat Spread
- 4 Slices Turkey Bacon Cooked and Diced
- 1/2 cup Breadcrumbs
- 1 Clove Garlic
- ½ tsp Mustard Powder
- 1 tsp Smoked Paprika
- Black Pepper
- Spring Onions Chopped for garnish
Instructions
- In a large pot of salted boiling water, cook the macaroni according to package directions. Drain and set aside.
- Dice the onion and place into a deep frying pan with the low fat spread, cook the onions until they are golden brown along with the garlic. Now add the flour and mix until all the low fat spread and flour have fully combined.
- Slowly add in the milk until you have a creamy-coloured sauce. Add the cheddar and mozzarella cheeses, stirring until melted and creamy. Add the mustard powder, paprika and black pepper and mix until it is fully combined.
- Add the cooked macaroni into the cheese sauce, stirring gently to coat everything in the luscious mixture. Fold in the crumbled turkey bacon for that irresistible smoky touch.
- Trim the bacon to remove any visible fat and grill it. Once it is cooked and crispy, chop the bacon unto small pieces and save for later.
- In a small bowl, add the breadcrumbs and a little cheese. Mix well to ensure the breadcrumbs are evenly coated.
- Preheat your oven to 190℃/375°F. Transfer the mac and cheese mixture to a baking dish. Sprinkle the breadcrumb mixture evenly over the top.
- Put the mac and cheese into the preheated oven and bake for about 15-20 minutes, or until the breadcrumbs turn golden and crispy.
- Once out of the oven, sprinkle the Healthier Loaded Mac and Cheese with the bacon and freshly chopped spring onions. Allow to cool slightly before serving, allowing the flavours to meld.
