Slimming world carrot cake

So I love carrot cake, whereas the other half doesn’t so I don’t make it as often as I’d like to. I know carrot cake isn’t exactly healthy but that all depends on how it’s made. This slimming world carrot cake however is super tasty and totally healthy, to a certain limit that is!

Carrot cake is something that can be enjoyed by most people, my partner not included. It’s a firm favourite amongst my family and I always make it when I go back home. You can make your slimming world carrot cake with or without the frosting, that being said I would recommend making it with frosting as it’s tastier!

The Best Slimming World Carrot Cake!

In my opinion, this is the best slimming world carrot cake recipe you will find. That might just be me blowing my own trumpet though. I’ve made it several times, I followed recipes online that were terrible and have changed them so many times to make sure it tastes great.

The thing you want to remember when you make the best slimming world carrot cake recipe, mix it well. I have seen loads of people complain that it’s not very nice, there are lumps and bumps and it doesn’t “look” like a carrot cake. It’s normally because the mixture hasn’t been mixed properly.

This might sound weird, but when making a carrot cake, you have to put in carrot! I know people that complain and then say they didn’t put carrot in, I mean it’s in the name, right? So make sure you follow the recipe card and add everything in that needs to be in there!

How many Syns In Carrot Cake?

So you might think, wow that looks amazing. This slimming world carrot cake must be packed full of syns and be really bad for me! Wrong, in fact, this whole cake only has 48 syns in which I find pretty impressive, don’t you?

That means per slice you’re only going to have to spend 6 syns a slice! How great is that? If you love your carrot cake as I do, you can enjoy as much of this slimming world carrot cake as you want and not feel guilty about it afterwards!

This is a nice, healthy slimming world dessert that you can enjoy after dinner or just as a little treat. I know carrot cake isn’t to everyone’s liking but I would suggest that everyone try it just to see if they like it, you never know you might find a new favourite!

Who doesn’t love slimming world cakes! Just because a cake tastes amazing and looks like it’s going to be full of syns, doesn’t mean it’s true. You CAN have your cake and eat it! I will also point out, this is a crowd-pleaser and maybe take one to work for everyone to enjoy, brownie points!

Slimming World Carrot Cake Recipe

A delicious carrot cake with a quark frosting

Equipment

  • Grater
  • Mixing Bowl
  • Silicone Spatula
  • Loaf Tin

Ingredients
  

  • 175 g Self Raising Flour
  • 110 g Sunflower Spread
  • 50 g Raisins
  • 7 g Sweetener
  • 1 Orange – Juice and zest
  • 50 g Carrots
  • ½ tsp Baking Powder
  • 1 tsp Cinnamon
  • ½ tsp Mixed Spice
  • 3 Eggs

Frosting

  • 125 g Quark
  • ¼ tsp Mixed Spice
  • ¼ tsp Orange – zest

Instructions
 

  • Preheat the oven to 180°C/350°F/Gas 4
  • Use a loaf tin liner to line the loaf tin ready for the cake mixture.
  • Grate the carrot and set aside for later.
  • In a bowl, add the flour, mixed spice, cinnamon, sweetener and baking powder togeter.
  • Add the spread to the mixture and mix until the mixture is starting to come together, then add orange juice and zest, then add one egg at a time, mixing until it is fully combined.
  • Add the grated carrot and raisins and mix together until fully combined.
  • Put the mixture into the lined loaf tin.
  • Bake for 45 minutes or until a skewer comes out clean from the middle of the cake.
  • Once out of the oven, remove from the loaf tin and place on a wire rack to cool for an hour.
  • Once the cake is cool, you can then start working on the frosting.
  • Add the quark, orange zest and mixed spice into a bowl, mix together until fully combined.
  • Spread the quark mixture over the top of the cake and leave in the fridge to firm up for an hour.
  • Cut the cake into 8 slices and enjoy with a hot drink.
