Working long hours sometimes means you need to have something quick and ready for when you walk in the door. That’s why I’m looking forward to making more slow cooker meals this year. I was looking to make something a little more healthy and that’s how I ended up making this vegetarian slow cooker three bean chilli recipe.
This three bean chilli recipe is to die for. It’s super easy to make and let me tell you, it’s really filling and totally cheap to make. If you’re looking for a cheap dinner, this is the one and you can see how much it really costs in the recipe card towards the bottom.
One of the things I love about this recipe is that it’s a vegetarian chilli which means most people can enjoy it. It’s easy to turn it into a vegan chilli recipe if you check what you use but I prefer to use the ingredients listed towards the bottom of the chilli recipe card.
Slow Cooker Chilli Recipe
Honestly, one of the things I love about this recipe is that it’s slow cooker chilli. That means I can have the chilli cooking all day while I’m at work, walk in the front door and get hit with an amazing smell and dinner that only needs dishing up, what’s not to love?
What I will say is that if you’re making this chilli recipe, make sure there’s enough liquid in the slow cooker so it doesn’t burn. If you’re home it’s a little easier to keep an eye on, stir whenever you can and you won’t need to add as much.
Healthy Chilli Recipe
As we all know I like to keep my recipes as healthy as I can. Of course, I have some more indulgent ones but this chilli con carne recipe is actually quite healthy. It’s filled with healthy ingredients that are also easy to use which I love. I can’t be bothered with a complicated recipe when I’m so busy!

Slimming World Chilli Recipe – Syns Free
So I have quite a few slimming world recipes on Matts Cafe. This is one of my super healthy slimming world meals and I have to say I love it. Low-Calorie Chilli Recipe – 211 KCAL
Low-calorie meals are something I’ve been trying to get into this year. I find that counting calories are a much more effective way to lose weight. I also find that my slimming world meals are low calorie, so that helps. This low-calorie chilli con carne is the perfect thing for any calorie counting program!
This low-calorie chilli recipe is going to cost you 211 calories per portion. Personally, I think that’s amazing and as it’s so enjoyable you don’t have to feel guilty at all!
High Protein Chilli Recipe – 23g Per Potion
Since I’ve started the gym I’ve been making a lot more high-protein recipes and I have to say, they’re quite nice. This recipe is really easy to make and it’s high in protein as well. This high protein chilli con carne recipe has 23g of protein per portion and I think that’s great!
Slow Cooker Recipes
So this might be a low-calorie chilli recipe, a slimming world chilli recipe and a high-protein chilli recipe but it’s also a slow cooker recipe and I love using my slow cooker! I have loads of slow cooker recipes and honestly, you have to try them.

Vegetarian Slow Cooker Three Bean Chilli Recipe
Equipment
- Slow Cooker
Ingredients
- 400 g Kidney Beans 1 Tin
- 400 g Mixed Beans 1 Tin
- 400 g Chickpeas 1 Tin
- 400 g Tomatoes (tinned chopped) 1 Tin
- 2 Peppers Sliced
- 1 Onion Sliced
- 1 Glove Garlic Minced
- 1 Vegetable Stock Cube
- 600 ml Water
- 2 tsp Chilli Powder Medium or Hot – You choose
- 2 tsp Cumin
- 1 tsp Cayenne Pepper
Instructions
- Empty all of the beans into a colander and rinse them. Then add them to the slow cooker.
- Slice the onion and peppers and put into the slow cooker.
- Max up vegetable stock with the stock cube and hot water. Pour into the slow cooker.
- Add all of the other ingredients to the slow cooker. Give it a stir and put on low and leave to cook for 8 hours.
- Serve with rice, nachos, jacket potato or whatever you enjoy.
