Loaded Lotus Biscoff Cookies recipe

Two of my two favourite things, are peanut butter cookies and Biscoff! I can’t get enough of either and that’s why I’ve made this very naughty, very high in calories but totally delicious recipe! I give to you my peanut butter loaded biscoff cookies!

These Lotus Biscoff biscuits are full of yummy goodness with Lotus Biscoff Spread covering the entire top and then Lotus Biscoff biscuit crumbled on top of that. So if you like Biscoff spread, you are going to love these.

I’ve wanted to make these forever and I’m glad I finally got around to making them. I won’t pretend and say they’re slimming world biscoff cookies because they’re not. I’m also not going to pretend and say these are low calorie biscoff cookies because the calories in one biscoff cookie would kill any calorie plan you may be on!

Instead, I’m going to let you know right now that these Biscoff cream biscuits are full of syns and full to the brim of calories. I did take a tub of these to work though and they were all eaten by the time I went home so that’s going to say something!

Loaded Lotus Biscoff Cookies

Why are they loaded? Well, as I mentioned before all these cookies are covered with Lotus Biscoff Spread, and then they have Lotus Biscoff Biscuits crumbled on top of that. So you could say it’s Death by Biscoff? I think that would be a great way to end everything.

It also depends on what kind of cookie you want to make. I find that a Biscoff cookie would be too much with all the Biscoff spread and Biscoff biscuit on top. I make a peanut butter cookie and then load it up with Biscoff, I think the two flavours together work really well, like something you’d never imagine would be good but is delicious.

I love using Biscoff in my recipes although the real thing can be quite expensive. So I get the off-brand version from Aldi. It tastes exactly the same, looks the same and nobody could tell the difference. What I will say is I use the Lotus Biscoff biscuits for the crumble on top. You can get a whole pack of these in Poundland!

Obviously, I think that these loaded Biscoff cookies are on the next level! I am looking at making some more recipes in the future using Bicoff and I’d love to know what everyone else uses their Biscoff for. Below you will find the recipe card for these amazing and easy to make loaded biscoff cookies. I’d love to know what you thought about them. As I said before, these went down a storm at work and I’ve been asked several times since to make them again.

When it comes to which Biscoff spread is best? I like to use smooth biscoff spread on this recipe, just because I think the crumbled Biscoff biscuits give it that crunch they need and the spread brings it all together like butter in a sandwich. You can use crunchy if you want though.

Loaded Lotus Biscoff Cookie Recipe

Lotus Biscoff Topped Cookies

Equipment

  • Mixing Bowl
  • Silicone Spatula
  • Baking Sheet

Ingredients
  

  • 200 g Peanut Butter Crunchy or Smooth
  • 180 g Caster Sugar
  • 1 Egg
  • 40 g Biscoff Spead
  • Pinch of Salt

Instructions
 

  • Pre-heat the oven at 180℃/350℉, and line the baking sheet with a silicone baking mat or baking paper.
  • Mix the peanut butter, egg, salt and sugar until you have a doughy mixture, put your mixture in the fridge for 5 minutes.
  • Divide the mixture into 12 balls, place them on the mat and flatten them with the back of a fork. Leave some space between each cookie.
  • Bake for 10-12 minutes, if you make a bigger size then you may need to bake them for longer.
  • Leave on the baking tray for 5 minutes and then transfer them to a wire rack to cool.
  • Put the Biscoff spread into a bowl and put it into the microwave for 30 seconds until it becomes more liquid.
  • Spread over the top of the cookies. Place the cookies into the fridge to chill for an hour.
  • Now enjoy them with friends, family or even co-workers.
