Slimming World Syn Free Meatloaf

Meatloaf is one of those meals that is really quick and simple to make, perfect for when the weather is a little on the poor side. It is heartwarming, filling and just another one of those meals that I would call as comfort food. It is a firm family favourite and what makes this extra tasty is that this meatloaf contains sweet potato, so it’s nice having extra veggies in a meal. Most meatloaf recipes will contain ingredients that will make it syn’ed, however this recipe is completely syn free.

If you have ever had meatloaf before and it’s been just ok, well this recipe will mean that you will have a tasty meatloaf, packed full of flavour, goodness and always a winner with the family. You may be thinking does sweet potato work in meatloaf, the simple answer is yes.

Sweet potato’s are packed full of goodness such as beta carotene, vitamins E and C, iron, potassium and vitamin B6. All of which are perfect for a healthy body. Sweet potatoes have less starch and are so much better for you that normal potatoes.

If you don’t like sweet potatoes, what could you use in the recipe instead? Well my partner thought it was carrot, when it is grated, carrot and sweet potato look the same. If you do use carrot, try and get rid of as much of the moisture as possible, as you don’t want it changing the consistency of your meatloaf.

How can you add speed foods to this recipe?

If you don’t know already, sweet potato is not a speed food, however it is better for you to eat than regular potatoes.

Like I have previously mentioned, you can use carrots in this recipe instead of sweet potato. The way to get some more speed food into you meals, you need to look at what to service with the meatloaf, look at some greens such as broccoli, green beans or even cauliflower mash.

Slimming World Syn Free Beef and Sweet Potato Meatloaf

If you have ever had meatloaf, you may have found that it can be a little dry or bland, this recipe is far from that. Packed with goodness, it is syn free and delicious. Give it a try.

  • 500 g Extra Lean Beef Mince
  • 250 g Sweet Potato Grated
  • 1 clove garlic crushed
  • 1 tsp Onion Powder
  • 2 tsp Paprika
  • 2 tsp Italian Herbs
  • 1 medium Egg
  • 240 ml Passata
  • 120 ml Chicken stock Can use vegetable stock if you prefer
  • 1 tbs Tomato Puree
  • 1/2 tsp Garlic Powder
  • Salt and Black pepper
  • Frylight
  • chopped fresh parsley
  • Salt and Black pepper
  • cooking oil spray


  • In a large bowl, add the mince beef, grated sweet potato, egg, herbs and spices and mix together until the mixture is full combined.
  • Line a loaf tin with some parchment paper, this is to make sure it doesn’t stick to the tin.
  • Add the meatloaf mixture to the loaf tin and push down to make sure it is compact.
  • Wrap the loaf tin in cling film and leave in the fridge for 30 minutes for the meatloaf to really incorporate the flavours. N.B you can skip this step if you are short on time.
  • Preheat oven to 180℃ or 350F (gas mark 4)
  • Place in the oven and bake for 50 mins.
  • While the meatloaf is cooking, you need to make the sauce.
  • In a saucepan, add the passata, tomato puree, stock, herbs, garlic powder and bring to a boil, then turn the heat down and simmer until the sauce reduces and thickens. Once ready, set aside.
  • When the meatloaf has cooked for 45 minutes, remove from the oven.
  • Increase the temperature of the oven to 200℃ / 400F (gas mark 6).
  • Add some of the sauce on top of the meatloaf and then return back to the oven. N.B The sauce will go a darker red, this is meant to happen.
  • Remove from oven, remove from the loaf tin, be careful as there might be some meat juices, you don’t need these, plate the meatloaf on a plate and let rest for 5 – 10 minutes before slicing.
  • Serve with mashed potato and vegetables
