Don’t you just love Easter? This year I’ve decided to do loads of recipes, some of them will be more healthy than others and some of them will be full of naughty calories. This creme egg brookie recipe is packed full of calories so don’t go thinking it’s healthy that’s for sure!

This creme egg brookie recipe is full of creme eggs and yummy goodness. You can tell from the photos that I decided not to decorate the top because they were so big and yummy I didn’t feel that they needed it, however, I might change that in the future if I make them again so watch this space.

Who doesn’t love Cadbury Creme eggs? They’re even better when they’re baked in a brookie that’s for sure. These are a cross between brownies and a cookie traybake recipe. It’s stuffed full of creme eggs and you won’t be able to get enough!

This creme egg brookie recipe will need at least 12 creme eggs and double that if you want to decorate the top as well, although it’s not needed unless you want it to look really pretty to impress people.

Now when it comes to making this creme egg brookie traybake recipe you’re going to need to make sure you do some bits right, otherwise, you might find your creme eggs melting or just disappearing into the brookie dough, which is less than ideal!

You’ll need really great knives if you want to cut the creme eggs in half. I prefer to keep my creme eggs in the fridge and after I cut them up I put them back into the fridge before adding them to the recipe. I feel that it makes a great creme egg brookie recipe!

When it comes to putting the creme eggs into the mixture you’ll need to make sure they are totally covered. Otherwise the white will melt out and you won’t get any creme eggs within the actual mixture. It doesn’t really matter how many creme eggs you put in there as long as they’re covered.

You can also mix the creme eggs into the brookie mixture if you wanted, I find using mini creme eggs are great within the mixture as well.

Ingredients
  

For the Cookie

  • 170 g Unsalted Butter Softened
  • 165 g Light Brown Sugar
  • 60 g Granulated Sugar
  • 1 Large Egg
  • 1 Large Egg Yolk
  • 1 tbsp Vanilla Extract
  • 255 g Plain Flour
  • ¾ tsp Salt
  • ¼ tsp Baking Soda
  • 180 g Chocolate Chips

For the Brownie

  • 200 g Dark Chocolate Melted
  • 170 g Unsalted Butter Melted
  • 285 g Granulated Sugar
  • 3 Large Eggs
  • 1 Large Egg yolk
  • 1 tbsp Vanilla Extract
  • 105 g Plain Flour
  • 85 g Cocoa Powder Sifted
  • 1 tsp Salt
  • ¾ tsp Baking Powder
  • 12 Cadbury Mini Creme Eggs Cut in half

Instructions
 

  • Preheat the oven to 180℃ / 350°F, grease a 9×9-inch pan, line the bottom and sides with parchment paper, and let the butter soften for at least 20 minutes. Use a silicone mould if you have one.

For the Cookie

  • Mix the softened butter with the brown and granulated sugar, then beat on medium speed until thoroughly combined, typically taking 2-3 minutes.
  • Now add the egg, egg yolk, and vanilla extract into the mixture, continuing to beat until thoroughly incorporated.
  • In another bowl, mix together the flour, salt, and baking soda until well combined. Gradually incorporate these dry ingredients into the dough at low speed until it begins to form. Just before the dough thickens, add the chocolate chips and sprinkles, and continue beating until they are evenly distributed. Then, set the mixture aside.
  • For the Brownie
  • Break the chocolate into small pieces and melt it in a microwave-safe bowl for about 2 minutes at 50% power, stirring intermittently until fully melted and smooth. Allow it to cool, then set it aside.
  • Microwave the butter in a safe bowl until melted, then mix it with the granulated sugar, beating until thoroughly combined.
  • Now incorporate the egg and egg yolk, then beat at a higher speed for 60 seconds until the batter reaches a fluffy consistency, akin to that of cake batter.
  • Now add the vanilla extract and melted chocolate into the mixture, and beat until thoroughly combined.
  • In a separate bowl, blend the dry ingredients together, then add them to the wet ingredients and mix until just combined.
  • Pour the prepared brownie batter into the bottom of the pan, then carefully arrange the unwrapped Creme Eggs on top, gently pressing them into the batter.
  • Take the cookie dough, flatten it with your hands, and press it into the brownie batter. Be careful not to push the brownie batter out.
  • Bake at 180℃ / 350°F for 35-40 minutes.
    I recommend covering with aluminium foil after 15-20 minutes to avoid excessive browning on top. To check for doneness, insert a toothpick into the centre; the brownie should be slightly fudgy but not wet. Allow it to cool for at least 1-2 hours before slicing.
  • Slice and enjoy
