Slimming World Beef Casserole
Who doesn’t love an amazing beef casserole on a winters night? Although to be fair you could have this slimming world beef casserole all year round because it’s so yummy. I’ve heard others call this a slimming world beef stew but I’ve never liked the term beef stew. This beef casserole recipe is full of all the goodness you need after a long day at work or after getting out that winter cold!
Slimming world Slow Cooker Casserole is a firm favourite in our flat, it’s a really easy beef casserole recipe and you don’t have to put in too much effort because the slow cooker does it all for you! If you’re not from the UK you might be looking for a crock pot recipe, if so this is the best crock pot beef casserole out there, the best slimming world beef casserole crockpot recipe ever!
Slow Cooker Casserole
One of the things I love is that this is a slimming world slow cooker recipe and who doesn’t love a slimming world slow cooker casserole recipe?! You might have realised already that I’m a big fan of slow cooker recipes, if I can make a slimming world slow cooker recipe, you can bet I’m going to!

How Many Syns In Slimming World Beef Casserole?
Good question, slimming world syns are very important. If you’ve tried this beef casserole you might be thinking there are loads of syns, but there aren’t as many as you’d think! It depends on the ingredients you use, this is a syn free beef casserole recipe although if you use gravy granules or milk in your mash then you will be looking at adding syns depending on what and how much you use.
Crockpot Cooking
If you are wondering what the difference is between a crockpot and slow cooker, well they are the same thing, it just depends on where you come from as to the wording you use. I absolutely love cooking with a slow cooker, you can make delicious meals and it literally only takes you 10 minutes to prepare.
Slow cookers are designed to cook food slowly for a long period of time, so if you’re out at work, you can put your slow cooker on and come home later that day to a perfectly cooked meal. If you are a worrier about having something on in the house cooking, then you can get a slow cooker with a timer.
There are so many meals that can be made in a slow cooker including Slow Cooker Gammon, Beef and Vegetable Pie or even a whole chicken for a roast. That is literally the tip of the iceberg, there is so much that you can cook in a slow cooker.
Slow Cooked Beef Casserole Recipe

Slimming World Slow Cooked Beef Casserole
Equipment
- Slow Cooker / Crockpot
Ingredients
- 700 g Lean stewing beef Diced
- 500 g Potato Peeled and Diced
- 200 g Swede Peeled and Diced into Large Chunks
- 200 g Green Beans
- 100 g Leek Thickly sliced or you can use an onion
- 50 g Mushrooms Sliced
- 1 Beef stock Cube
- 2 tsp Dried Thyme Or other herbs that you like.
- Salt and Black pepper
- 800 ml Water
Instructions
- Remove all visible fat from the beef and cut it into bite size chunks
- Peel and prepare all vegetables.
- Unless you prepare and freeze your vegetables as I do, check out my post about freezing vegetables – To Freeze or Not to Freeze.
- Put the diced beef into the slow cooker, followed by all the vegetables, stock cube, water, herbs and salt and pepper.
- Leave to cook for 8 hours or more.
- If you want to add potatoes to the casserole then do so, but you may need to adjust the liquid. Or you can make mashed potaotes as I have in the pictures. Then enjoy!!
